Busy making bottled Harpoon Cold Brew in New Zealand.

We are producing via a full immersion method, with an 18 hour steep time. Currently we run small (25-40L) batches of a ready-to-drink and a concentrate. Our plan for this year is to buy at least one large stainless tank and go for batches with a 1000L yield that can be sent to a contract bottling line. I've so many questions, and would love all the help I can get to avoid falling foul of unsuccessful methods and equipment.

I've a mechanical engineering degree but they didn't teach me the stuff that I'd like to know right now for upscaling production!
