Why solubledoes instant coffee foamsfoam when stiringstirring it  ?

I have seen that when preparing coffee without milk  (just water and coffecoffee), soluble coffeinstant coffee (at least Nespresso one) foams when stiringstirring it just a bit. However, not soluble coffe doesregular coffee grounds do not.

Does someone know the reason for this?
